Marriott International released its Future of Food 2027 report detailing dining trends across Asia Pacific, excluding China.
Surveyed properties identified demand for authentic local dishes as the primary regional market trend, with 95% citing its significance over value for money. Four in five properties introduced new local ingredients over the past year.
Casual venues, such as bars and lounges, saw growing demand across nearly half of surveyed properties. In Vietnam, 71% of properties reported growth in bar and lounge dining.
Artificial intelligence supports operations across surveyed venues, with 100% of Thailand properties using the technology. Additionally, 58% of regional properties reported fine dining experiences lasting under two hours.
Marriott announced plans to launch its APEC Plant-Forward Program in 2027. Health-associated dishes are currently served at 97% of surveyed regional properties, while 42% reported increased sales of non-alcoholic beverages.
